Coco-Moco Balls
1 cup natural unsweetened peanut butter
1/4 cup margarine
2/3 cup icing sugar
1/3 cup unsweetened shredded coconut
2 tsp vanilla
1 Tbs instant coffee
1 Tbs coco powder
For Dipping
3/4 cup semi sweet chocolate chips
1/4 cup milk
To form the balls, mix all ingredients in a kitchen mixer. Mix on medium for three to five minutes -- the mixture should be thoroughly combined. Next, use your hands to form the mixture into balls. The balls should be about the size of a chestnut. Place on a cookie or baking sheet lined with wax paper. Place a toothpick in each ball, then put in the sheet in the freezer for two hours.
At the two-hour mark, put the chocolate and milk in a small bowl in the microwave. Microwave mixture in thirty-second intervals, stirring between each one until a sauce forms.
Then, using the toothpicks, dip each ball into the chocolate fully covering it. Place back on cookie sheet and into freezer for another hour.
Enjoy! Store in freezer so chocolate doesn’t melt.
